Jahana Kippan-ten is the sole keeper of 'kippan' — a 700-year-old Ryukyu royal court confection made from sugar-preserved winter melon and citrus peel. This delicate sweet, preserved as a culinary cultural heritage of Okinawa, is painstakingly handcrafted by dedicated artisans who rescued it from near-extinction. Visitors to Shuri Castle form queues here on their way back, and experiencing this sweet alongside a UNESCO World Heritage Site deepens appreciation of Ryukyuan culture.
